Agnes’ Yummy Carrot Casserole

This is the carrot casserole that Natalie talks about in December 2012 article in “Canadian Living Magazine”.¬† Agnes Leahy is Natalie’s sister-in-law.

1/4 cup Butter
1/4 cup Onion chopped
1/4 cup Flour
1 1/2 cup milk
1/3 cup grated cheddar cheese
1 tbls. Chopped parsley
1/4 tsp. Salt
1/4 tsp. Pepper
4 cups sliced cooked carrots

4 tbls. Butter
2 cups crushed cornflakes

Melt butter add onion, cook on low heat till soft. Stir in flour, add the milk slowly untill
thick and smooth. Remove from heat and add cheese, parsley salt and pepper. Add carrots and put into a baking dish. Melt the butter and mix in cornflakes. Spread over top of casserole.
Bake for 20 minutes in a 375 degree oven.
