Holly’s Potato Salad

I get asked to make my Potato Salad for every family gathering!
2 – 3 lbs new potatoes, cooked, peeled and diced
2 carrots, grated fine
10 oz can peas, drained
Small bag of radishes, chopped
4 – 5 green onions, chopped
5 hard boiled eggs, shelled and chopped
Miracle Whip (use lots so that the salad is creamy)
Mix all ingredients together. Blend gently until well mixed. Cover with saran wrap and chill for several hours before serving. It is best with new potatoes as they are wetter and make firmer cubes but you can use any potatoes.
