Irish Soda Bread

Irish Soda Bread

1 1/2 cups sugar
1 stick butter
2 eggs
1 pint sour cream
1 1/2 tsp baking soda
1 tsp salt
3 1/2 cups flour
1 cup plumped raisins*Mix all ingredients and cook in round pan for 45-60 minutes in 350 F oven. Knife should come out clean of center when done.

*To plump raisins, put in pan and cover with water. Bring to a boil. Remove from heat and let sit in covered pan for 5 minutes. Drain.
