Mary MacMasters’ Carrot Cake

2 cups flour
2 cups sugar
1/2 teaspoon salt
2 teaspoons Baking Soda
1 cup Crisco oil
2 teaspoons cinnamon
1 teaspoon Allspice
4 eggs
3 cups finely grated carrots

Sift dry ingredients into large bowl. Add oil and stir well, making a very stiff mixture. Add eggs , one at a time, mixing well after each addition. Add carrots and blend well. Pour batter into greased 9 x 13 pan or layer cake pans and spread evenly. Bake 350 degrees oven for 40 to 50 minutes. When cool frost cake with cream cheese frosting.

Cream Cheese Frosting

1/4 cup butter
2 cups sifted icing sugar
4 ounces cream cheese
1 teaspoon vanilla
1/4 cup walnuts (optional)
