Mashed Potato Casserole

Mashed Potato Casserole

This casserole is a family favorite. See if it doesn’t become a favorite in your family!
6-8 medium potatoes, peeled and boiled
1/2 stick butter
1 cup sour cream
1 1/2 teaspoons salt
1/2 teaspoon pepper
6 ounces cream cheese
1/2 cup Parmesan cheese
2 eggs, slightly beaten

While hot, mash potatoes. Add all ingredients except Parmesan cheese and eggs. Beat until
fluffy, then add the Parmesan and eggs. Spray a casserole dish with non-stick cooking spray
and add the mixture.

Bake at 375 degrees until puffy and slightly browned (about 25 minutes).
