Zucchini Chocolate Cake

1-3/4 c sugar
1 c oil
2 tsp vanilla
2 c shredded zucchini
2 sq melted unsweetened chocolate*
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2-1/2 c flour
*or use ¼ cup cocoa powder
1. Grease and flour a rectangular cake pan. Preheat oven to 350 degrees.
2. Put all ingredients in a bowl and stir till combined.
3. Pour into cake pan and bake for 45-55 minutes. Toothpick inserted in center should come out clean.
4. Optional dusting with icing sugar or topping of icing (it is so good that you really don’t need any of that).
